Spring Inspired Sausage Roll Recipes

Spring is here, and so is picky tea season. Whether you're grazing in the garden or pulling together a no-fuss spread, these sausage roll recipes bring big flavour in bite-sized form - perfect for picnics, parties, or just because.

We’re using Sizzling Sausage Meat, which is currently available in store, as our key ingredient for these recipes, but if that doesn’t take your fancy, simply swap it with your favourite meat-free alternative for a delicious vegetarian version.

Apple & Herb Sausage Rolls

A sausage roll with a seasonal refresh. This herby upgrade keeps all the comfort but brings a fresh, feel-good twist. Great for when you fancy something familiar - but fancier.

Ingredients:

  • 454g Sizzle Sausages Pork Sausage Meat (or substitute with your favourite veggie option)

  • 1 small apple, grated

  • 1 tsp dried sage or a few fresh leaves, chopped

  • 1 tbsp chopped fresh chives

  • 1 sheet ready rolled puff pastry

  • 1 egg (for glazing)

Method

  1. Preheat oven to 180°C. Mix sausage meat with grated apple, sage, and chives.

  2. Cut the pastry into 2 equal size pieces. Shape the sausage mixture into 2 equal cylinder shapes and put in the centre of the pastry squares.

  3. Roll the pastry over the sausage, seal the edges with a fork, and slice into mini rolls.

  4. Brush with egg and bake for 20–25 mins until golden and cooked through.

Skip the slicing and go big! Instead of cutting up your sausage roll, leave it whole and bake it a little longer to make sure the sausage meat cooks all the way through. The result? One giant, delicious sausage roll - perfect for serious appetites!

Zesty Herb Sausage Rolls

Craving something with a bit of zing? This zesty sausage roll is made with lemon zest, parsley, and thyme, adding a fresh, herby twist to the classic.

Ingredients:

  • 454g Sizzle Sausage Sausage Meat

  • 1 tsp lemon zest

  • 1 tbsp chopped fresh parsley

  • 1 tsp fresh thyme leaves (or ½ tsp dried)

  • 1 sheet ready-rolled puff pastry

  • 1 egg, beaten

  • Optional: pinch of black pepper and rock salt

Method

  1. Preheat oven to 200°C. Mix sausage meat with lemon zest, parsley, and thyme.

  2. Cut the pastry into 2 equal size pieces. Shape the sausage mixture into 2 equal cylinder shapes and put in the centre of the pastry squares.

  3. Roll the pastry over the sausage, seal the edges with a fork, and slice into mini rolls.

  4. Brush with egg and bake for 20–25 mins until golden and cooked through.
