A Berry Delicious Recipe...

There’s something special about having breakfast in bed, and we’ve got the perfect recipe to make Mother's Day even sweeter.

Baking this delightful treat is a great way to show someone you care, and since it’s made from surplus ingredients, breakfast has never tasted better!

Ingredients

  • 6 large croissants (leftover or stale croissants work perfectly)

  • 500g ready-made custard

  • 250ml whole milk

  • 150g lemon curd

  • 250g berries of your choice (raspberries and strawberries make a great combination)

  • A sprinkle of icing sugar (if you're feeling fancy!)

Method

Before you start baking, grease your oven-proof dish with butter or oil – this will make the washing up a lot easier!

  1. Cut your croissants in half and squash them into your dish. Try to avoid too much overlap or they won’t bake evenly.

  2. Add the milk and custard to a saucepan and heat through whilst gently stirring until it starts to steam. Add ½ of the lemon curd and stir. Pour it over the croissants and let it sit for about 1.5-2 hours – this will give some time for the custard to sink into the croissants and give them more flavour.

  3. Preheat your oven to 180°c. Spoon the remaining lemon curd over the croissants, then add your chosen berries to the gaps between them.

  4. Bake for about 40 minutes, or until the top is golden and crispy. Sprinkle with icing sugar if you’re feeling fancy and serve. Bon appetit!

If you’ve got some jam in your cupboard, add that too! Mixing jams and conserves, along with the lemon curd, can add more variety and sweetness to every bite. 

And voilà! Surplus made scrumptious!
