Fresh & Flavourful Spring Salad Recipes

Who said salads had to be boring? Give your spring plate a flavour boost with these bold, vibrant salads! From sweet and spicy grilled goodness to crisp, tangy freshness, these salads are the perfect way to add some springtime zing to your table.

Sweet & Spicy Grilled Cheese Salad

This grilled cheese salad is the perfect spring dish - light, fresh, and bursting with vibrant flavours. With peppery rocket, juicy tomatoes, and a sweet honey drizzle, it’s a delicious balance of savoury and spicy, ideal for sunny days.

Ingredients:

  • 200g Yamas! Chilli Grilling Cheese or Reduced Fat Grilling Cheese

  • 2 large handfuls fresh rocket

  • 10–12 cherry tomatoes, halved

  • 1–2 tbsp squeezy honey

  • Olive oil for grilling

Method

  1. Slice the cheese into thick pieces and grill until golden and slightly crispy.

    Top tip: if you’d prefer a crispier finish, cook your cheese in a frying pan with a tiny bit of oil. This will cook more quickly and make the edges crunchier.

  2. Toss fresh rocket, juicy cherry tomatoes in a bowl.

  3. Add your cheese, and drizzle over honey for a sweet and spicy finish.

Add some toasted pine nuts and pomegranate seeds for an extra crunch and burst of sweetness in every bite.

Crisp Apple & Honey Vinaigrette Salad

A fresh, vibrant salad with crisp apple, baby spinach, walnuts, and crumbled feta, all drizzled with Mary Berry’s Honey & Apple Cider Vinaigrette. Simple, flavourful, and perfect for any occasion!

Ingredients:

  • 1 crisp apple, thinly sliced

  • 2 large handfuls baby spinach

  • 1 small handful walnuts, roughly chopped

  • 50g feta, crumbled

  • 1–2 tbsp Mary Berry Honey & Apple Cider Vinaigrette

Method

  1. Thinly slice your apple and add to a bowl with washed baby spinach.

  2. Chop thew walnuts to your preferred size, and sprinkle over the spinach with crumbled feta.

  3. Drizzle with vinaigrette and voilà!
